ALL of them. Trains can switch tracks when there is a double track and operate in either direction as local situation requires. Platforms can be to the outside for single track service or can be islands having platforms on both sides.
Trains do tend to operate on the same side as road traffic. In particular Subway stations.

People tend also to walk on the footpaths the same way that traffic goes.

There are doors on BOTH sides of the train. Different stops/Stations use one side or the other. They DO NOT have to be just from one side.
